Bush Cooking (No. 2).

Potatoes Cooked  in the ashes

Select large new potatoes. Rake away the ashes of the fire, dig a little shallow pit, line it with warm ashes and in it pack the potatoes in a single layer. Put another thick layer of hot ashes free from coals over them and on top light the fire for cooking the dinner. Give the potatoes at least an hour to cook, and at the end of that time test them with a small, stiff twig. If they are not quite soft under their tough skin, or the twig comes out sticky, give them at least another fifteen minutes' cooking.

After removing the potatoes from the ashes, dust them clean, split them lengthwise and serve with a dab of butter on each half. Potatoes cooked in this way are particularly nice when served with chops grilled over an open fire or smoked fish which have been toasted on a fork in front of hot coals, like slices of bread.
