Recipe

Horseradish Sauces

Tasty Sauce

4 tablespoons of grated fresh root
2 tablespoons of wine vinegar
2 teaspoons of dry mustard

Mix the ingredients until well blended then add 4 tablespoons of beaten cream. Chill for half an hour before serving.

Hot Horseradish Sauce

1oz. butter salt
1oz. flour   2 tablespoons grated horseradish
1/4 pint water    sugar to taste
1/4 pint milk

Prepare a basic white sauce from the flour, butter, milk and water, and when it is smooth, add the horseradish, salt and sugar. Mix well, and serve very hot.

Horseradish Sauce

1 hard-boiled egg  Drops of garlic juice
2 teasp. oil  1 heaped tablesp. finely grated horseradish
2 teasp. lemon juice Chopped white of eggs (if used with fish)
Salt Drops of onion juice 

Method:

1. Mix the yolk with the oil and the lemon juice to a thick cream. 
2. Add salt, a few drops of onion juice and garlic.
3. Add the horseradish (more or less according to taste). 
4. Add finely chopped egg-whites.

Apple and Horseradish Sauce

Serve with boiled fish, together with melted butter.

6 peeled apples, large 1 glass lemon juice
2 tablesp. sugar  Grated horseradish (according to taste)
1 glass white wine

Method:

1. Grate the apples.
2. Add the sugar, the white wine, and the lemon juice. 
3. Add grated horseradish.
4. Mix well until the mixture appears frothy.
